Korean Spicy Kalguksu Recipe

Recently I’ve been keep uploading recipes based on what I had in Korea last previous trip, so it might be helpful for you to check it out!!

Ok, just an example, it was pouring rain when we go there after 6+ hours of bus riding, which should take us only a little less than 4 hours.

So at the bus stop, we just took a taxi and went to the first stop- the restaurant serves the east coast local cuisine (I’ve been researching for days, too!).

When we arrived (not getting out of the taxi yet), it was LINED UP people, seems like at least 2 hours of waiting…

It was a tiny tiny restaurant that only locals come for their specialty local cuisine, which is Jang Kalguksu (spicy noodle soup) and Ongsimi (potato dumpling soup), and more!

Nowadays you can easily buy the fresh Kalguksu noodles at the Korean/Asian grocery stores and I prefer to use those because it saves my time SO MUCH and it just makes the whole idea of cooking the dish so much easier.

It’s like we all know the handmade pasta is fancy and delicious and all but always go buy the ready-to-use pasta from the grocery stores. lol!

But I decided to give you the clear recipe for the Kalguksu noodle recipe from scratch because I know you all care about what’s in the food that you are about to share with your loved ones.

You can make my Kalguksu noodle recipe with your hand instead of using a standard mixer. I used to make it by hand all the time before I purchased the standard mixer, but since I have it now… I just use the heck out of it. lol!

Chicken Kalguksu (dak Kalguksu)

In a standard mixer bowl combine flour, salt, and oil. Carefully pour hot water and mix over medium speed until it becomes one piece of dough. Scraping the side as needed. Now over low speed, knead the dough for 7 to 8 minutes.

Slice potato into a half-moon shape. Slice onion into the same thickness as the potato. Julienne carrot and zucchini. Cut green onions in half lengthwise then cut into 2-inch long pieces.

I liked to use already sliced and dried shiitake but you can use regular whole shiitake too. Just take them out when they got soft, slice then put them back to the soup!

Meanwhile, the broth is simmering, roll out your dough to 1/8-inch (2 to 3 mm) thin using a rolling pin. Dust flour lightly as needed on the work surface and the dough while rolling.

Fold and roll the dough sheet loosely into 2-inch wide. Dust dough sheet lightly with flour each fold to keep them from sticking. Cut into 1/4-inch wide noodles or other desired thicknesses., is a comforting Korean noodle soup dish that is spicy, flavorful, and comforting. Chicken Thigh – I like to use chicken thigh since it’s a good balance of using a lean protein source but still being juicy enough to enjoy the meal.

Kalguksu – An important component of this dish is the kalguksu or knife-cut noodles. You can buy them at your local Asian grocery store.

Gochujang – To simplify the recipe, I used store-bought chicken stock. You can also opt to make your own homemade chicken stock.

Cook the noodles – While the stock and chicken are cooking, cook a portion of the noodles according to the package instructions.

Finish the stock – When the chicken is thoroughly cooked, pour the whisked egg into the stock and lower the heat, ensuring the egg is mixed in thoroughly. The stock will thicken in texture and have a slightly, creamy consistency.

Make the bowl and serve – Add the noodles into the stock and pour into a noodle soup bowl. Garnish with seaweed, sesame seeds, and scallions, and enjoy your delicious Jang kalguksu.

Mix egg thoroughly – Whisk the egg thoroughly before adding it to the soup and lower the heat. Not doing so will result in chunky egg pieces in the soup. It will still be delicious, but whisking it thoroughly will give the entire soup a delicious creamy texture.

Don’t burn the aromatics and gochugaru – Burnt garlic and gochugaru do not have the most pleasant taste. Be sure to stir the aromatics consistently to prevent burning.

Gochujang

Kalgukusu’s direct translation in English means “knife-cut noodle”. It typically refers to noodles made from wheat flour. Jang kalguksu refers to the gochujang paste mixed in the soup base.

If you do make ahead and store, I would recommend only making the stock ahead and cooking the noodles only when you’re ready to serve. The soup will last in the fridge in an airtight container for 3-4 days.

Unlike Jjampong/Jjamppong (짬뽕, Korean spicy seafood noodle soup), Kalguksu is not spicy.

One of the highlights of this noodle soup is the handmade knife cut noodles. These noodles are thin flat shapes and have a bouncy texture.

Though, I normally buy pre-made Kalguksu noodles from a Korean grocery store, because if I were to make them at home, it will add about 1 hour of additional cooking time.

Easy

There are a few variations of Kalguksu, but my number one choice always has been Bajirak Kalguksu (바지락 칼국수, Knife cut noodle soup with littleneck clams). I don’t know what it is, but I love the light and refreshing taste that comes out of this little seafood.

Since I’m a seafood lover, I oftenthrow in some prawns as well. But, if you’re not going to add the prawns, just add more littleneck clams.

I’ve seen some Koreans adding squid or baby octupus in their soup, which looks so tempting. If myseafood choice is more than just littleneck clams, I would call it, Haemul Kalguksu (해물칼국수, Knife cut noodle soup with seafood).

There’s alsoDak Kalguksu (닭 칼국수, Knife cut noodle soup with chicken), this soup has a lot deeper and meatier flavour. Typically these types of meaty soup are additionally seasoned after you serve it.

Since the Kalguksu noodle and soup is mild, the best combination with it is obviously, Kimchi! It particularly goes very well with freshly madeKimchi saladand also withcubed radish Kimchi (Kkakdugi).

Kalguksu is warm comfy food. I particularly love having it on a cold rainy day and in winter. It will warm your body up for sure! Hope you enjoy my recipe!

1.Boil the anchovy and kelpstock in a pot on medium heat. Add the soy sauce, minced garlic and salt to season the stock. Once the stock is rolling boiling, add the zucchini, carrots and shiitake mushrooms and cook until lightly softened (about 2 mins). Then add the clams and prawns and boil until they’re cooked (about 2 mins). Make sure you don’t over cook them as they can get gummy.

2. (Ideally at the same time as step 1) In a separate pot, boil the noodles in rolling boiling water until cooked (2 to 3 mins). Drain and rinse with cold running water. Set aside.

3. Add the noodles into pot 1 (from step 1) and boil for one minute to make the noodles warm. Stir around. Add the green onion and turn the heat off. Serve while hot.
